
Sink your teeth into this rich, savoury mushroom burger – a deeply satisfying plant-based patty made from finely minced mushrooms and gently cooked onions. Crispy on the outside and soft, umami-packed on the inside, this is a brilliant way to turn foraged or cultivated mushrooms into a hearty main meal.

Any firm, flavoursome mushrooms work well – field mushrooms, blewits, oysters, or a mixed basket of edible woodland fungi. Add few boletus as they will help bond the burgers.

Ingredients:
300–400g mushrooms, finely chopped
1 medium onion, very finely chopped
1–2 tbsp oil or butter
1 egg
3–4 tbsp plain flour (enough to bind)
3–4 tbsp breadcrumbs (plus extra for coating)
Salt and black pepper to taste
You can add mince meat if you prefer more traditional burger just with hint of mushrooms
Optional extras (recommended):
½ tsp smoked paprika or ground cumin
Fresh herbs (parsley or thyme or ground elder), finely chopped

To Do:
Prepare the Mushroom Base:
Finely mince the mushrooms using a knife (or pulse briefly in a food processor).
Heat oil or butter in a pan and gently cook the chopped onion until soft and translucent.
Add the minced mushrooms and simmer gently, stirring often, until softened and excess moisture has cooked off.
Season lightly and allow the mixture to cool slightly.
Make the Burger Mix:
Transfer the mushroom-onion mixture to a bowl.
Add the egg, flour, breadcrumbs, seasoning, and any optional spices or herbs.
Mix well until it forms a soft but workable mixture. Adjust with a little more flour or breadcrumbs if too wet.
Form the Burgers:
Shape the mixture into burger-sized patties using your hands.
Dust each patty lightly in breadcrumbs to coat the outside.
Fry:
Heat oil in a frying pan over medium heat.
Fry the burgers for 3–4 minutes on each side until golden brown and crisp.
Remove and drain briefly on kitchen paper.
Serving Suggestions:
Serve in a toasted bun with lettuce, wild garlic mayo, pickles, or caramelised onions.
Also excellent plated with roasted vegetables or a fresh seasonal salad.
