Forage Time:
- Spring through early summer
Foraging Site:
- Pesticide-free meadows, lawns, or garden edges
Patience Required:
🌟🌟 (a bit of time, but worth it!)
Ingredients:
- 2 cups fresh dandelion flower petals (remove green parts)
- 4 cups water
- 3 cups sugar
- 1 lemon (sliced)
What to Do:
1️⃣ Gather Your Flowers
Pick bright, fresh dandelion heads and remove the green bases, keeping only the yellow petals. This ensures a smooth, floral flavor.

2️⃣ Prepare the Infusion
In a large pot, simmer the dandelion petals with water and sliced lemon for about 20 minutes. Remove from heat and let the mixture steep for 2–3 hours (or overnight for stronger flavor).
3️⃣ Strain the Liquid
Strain the mixture through a fine sieve or cheesecloth, pressing the petals to extract as much liquid as possible. Discard the solids.

4️⃣ Create the “Honey”
Return the liquid to the pot and add sugar. Simmer on low heat, stirring occasionally, until the liquid thickens to a syrup-like consistency. This can take 1–2 hours.
5️⃣ Bottle It Up
Pour the dandelion “honey” into sterilized jars while warm, seal tightly, and let it cool completely.
Storage and Use:
Your dandelion “honey” will keep for several months in a cool, dark place. Use it just like regular honey—as a spread, sweetener, or drizzle for desserts.
