Damson Jam

Damson jam is a quintessential homemade preserve, perfect for spreading on toast, pairing with scones, or gifting to loved ones. With its rich, tangy flavor, this jam will quickly become a household favorite. Follow this step-by-step guide to create your own delicious damson jam.

Forage for:

Damsons (or substitute with plums)

Forage Time:

Late summer to early autumn

Foraging Site:

Find damson trees along hedgerows, parks, or countryside trails. Always ensure foraging is permitted in your area.

Patience Required:

** (A little patience goes a long way!)

Ingredients:

1/4 cup (60 ml) water

1. Prepare the Damsons

2 pounds (900 g) damsons or plums

2 pounds (900 g) granulated sugar

Juice of 1 lemon

Wash the damsons thoroughly to remove dirt and debris. Halve them and remove the stones. If the stones are difficult to remove, don’t worry—you can extract them during cooking. (If you have been making damsons wine, use the leftover pulp after straining the liquid as your base for jam and follow the recipe here – adjust sugar level to taste)

2. Cook the Fruit

Place the halved damsons in a large, heavy-bottomed saucepan. Add the water and lemon juice. Cook over medium heat until the fruit softens and breaks down, about 15-20 minutes. Stir occasionally to prevent sticking.

3. Add the Sugar

Lower the heat and stir in the sugar until fully dissolved. Increase the heat and bring the mixture to a boil. Let it boil rapidly for 10-15 minutes, stirring frequently. Use a spoon to skim off any foam that forms on the surface.

4. Test for Setting Point

To check if the jam is ready, place a small amount on a chilled plate. Let it cool for a minute, then push it gently with your finger. If it wrinkles, the jam has reached its setting point. If not, boil for another 2-3 minutes and test again.

5. Remove Stones (if necessary)

If you left the stones in earlier, use a slotted spoon to remove them now. They should float to the surface during cooking.

6. Jar the Jam

Carefully pour the hot jam into sterilized jars using a ladle or funnel. Seal immediately with sterilized lids. Allow the jars to cool completely before storing in a cool, dark place.

Pro Tips for Perfect Damson Jam:

Serving Suggestions: Spread on fresh bread, use as a filling for cakes, or enjoy with cheese for a sweet-savory pairing!

Foraging Tips: Choose ripe, slightly soft damsons for maximum flavor. Avoid any with signs of damage or rot.

Sterilizing Jars: Boil jars and lids for 10 minutes, or wash them in hot soapy water and place in a warm oven to dry.
