Step 2: Cook the Fruit

Cook the cherry plums over medium heat, stirring occasionally, until they begin to break down and release their juices. This process usually takes about 10-15 minutes.

Step 3: Add the Sugar

Gradually add the granulated sugar, stirring continuously to ensure it dissolves completely. Bring the mixture to a boil and let it bubble gently for about 20-25 minutes. Skim off any foam that forms on the surface to keep the jam clear.

Step 4: Check for Setting Point

Test the jam for its setting point by placing a small spoonful on a chilled plate. Allow it to cool for a minute, then push it gently with your finger. If it wrinkles slightly, the jam is ready. If not, continue boiling and test again every few minutes.

Step 5: Jar the Jam

Carefully ladle the hot jam into sterilized jars, leaving a small gap at the top. Seal the jars immediately with sterilized lids. Once cooled, store in a cool, dark place. Properly sealed, the jam can last up to a year.
