Dandelion Syrup

Delight Your Table with This Dandelion Syrup Recipe

Dandelion syrup is a sweet, golden treat that captures the essence of spring. Known for its rich, honey-like flavor, it’s a versatile syrup that can be used in everything from sweetening drinks to drizzling over pancakes or yogurt. This foraged syrup is both delicious and a fun way to celebrate the abundant dandelion flowers that bloom in the spring.

What Makes Dandelion Syrup Special?

Dandelions are often considered weeds, but their flowers are packed with natural sweetness and are perfect for creating this unique syrup. The flavor is light, floral, and slightly reminiscent of honey, making it a wonderful alternative to traditional sweeteners.

Ingredients

  • 200-250 dandelion flowers (freshly picked, with the green parts removed)
  • 1 liter (4 cups) water
  • 750 g (3 3/4 cups) granulated sugar
  • Juice of 1 lemon
  • Optional: A few slices of ginger, a cinnamon stick, or a couple of cloves for added flavor

Instructions

Step 1: Harvest and Prepare the Flowers
Pick dandelion flowers on a dry, sunny day. Be sure to only harvest the yellow petals, removing as much of the green stem as possible, as it can make the syrup bitter.

Step 2: Make the Flower Infusion
Place the dandelion petals into a large saucepan. Add the water, then bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes. The water will turn a rich, golden color as it absorbs the flower’s natural sugars.

Step 3: Strain the Infusion
After simmering, strain the dandelion infusion through a fine mesh sieve or cheesecloth into a clean bowl, discarding the flowers.

Step 4: Add Sugar and Lemon
Return the strained liquid to the saucepan. Add the granulated sugar and lemon juice. Stir until the sugar dissolves completely. If you’re using any optional flavorings, such as ginger or cinnamon, add them at this point.

Step 5: Simmer to Thicken
Bring the mixture to a simmer and cook for 30-40 minutes, stirring occasionally, until the syrup thickens. Keep an eye on the mixture to ensure it doesn’t overcook or burn. The syrup is ready when it reaches the consistency of honey or maple syrup.

Step 6: Bottle the Syrup
Once the syrup has thickened, remove any whole spices, and pour the hot syrup into sterilized bottles or jars. Seal immediately while still hot. Let it cool to room temperature, then store in the refrigerator. The syrup will keep for up to 3-4 weeks. For longer storage, you can process the jars in a water bath for sterilization.
