Pickled St George mushrooms

St George Mushroom

Foraging Site: Loughborough along the canal

Patience required: *

Ingredients

  • As many good firm St George mushrooms as you can find (keep the less firm ones for a simple fry up in butter)
  • 1 unit Vinegar
  • 2 units of water
  • Salt
  • Sugar
  • Onions
  • Garlic

To do

  • 1) Cut the mushrooms into smaller bits and rinse in cold water
  • 2) In a small pot put water and vinager, salt and sugar untill you like the taste- it can be a bit on a strong side now as the mushrooms will let in more water.
  • 3) Add mushrooms into the pot and bring to boil, simmer for 5 min.
  • 4) Chop up a little bit of inion- but at the bottom of sterilized jar
  • 5) Retaste the liquid – if it still tastes good, start scooping the mushrooms with the liquid into your jar. Otherwise add salt or sugar (sweetener instead of sugar add a better taste for me) More mushrooms less liquid.
  • Close the lid and leave to cool.
  • These are good to eat after a few days but will also last a long time.

Lovely health meal on its own as very rich in flavour or as an acompaniment to main dish.
