daisy

Want to try something truly unique? Capture the essence of summer with these delightful pickled daisy flower buds. Their tangy, floral notes are sure to add a burst of flavor to your winter dishes—and a touch of sunshine to your day!

Forage for:

  • Daisy flower buds (preferably unopened)

Forage Time:

  • Early Spring through Summer

Foraging Site:

  • Lawns, meadows, or garden edges

Patience Required:
🌟 (just a little!)

Ingredients:

  • Fresh daisy flower buds
  • Vinegar
  • Sugar
  • Peppercorns

What to Do:

1️⃣ Gather Your Daisies
Pick unopened daisy flower buds or firm flower heads. Allow them to sit for a while so any insects can escape.

2️⃣ Prepare Your Jars
Thoroughly clean and sterilize your jam jars. Pack them tightly with the daisy buds.

3️⃣ Make the Brine
Simmer equal parts vinegar and water with a handful of peppercorns. Stir in sugar to taste until dissolved, then let the mixture cool slightly.

4️⃣ Combine and Seal
Pour the cooled brine over the daisy buds in the jars, making sure the peppercorns are distributed evenly. Seal the jars tightly.

5️⃣ Wait and Enjoy!
Let your jars sit for at least 10 days to develop their flavor. Stored properly, these pickled daisies will last for months—always ready to impress guests and brighten your meals!

Daisy buds pickled this way are not only a treat for your taste buds but also a conversation starter at your dinner table. Try them as a tangy garnish, in salads, or on a charcuterie board. Who says you can’t taste summer all year round? 🌞
