Dandelion Spaghetti with Lentils: A Wild Twist on Pasta Night

What Are Dandelion Stems?

Dandelion stems come from the common dandelion plant (Taraxacum officinale), often seen as a garden weed but packed with nutrients. While the leaves and flowers are more commonly used in salads and teas, the stems offer a surprising culinary use when prepared correctly.


Ingredients

To serve 2-3 people, you’ll need:

  • 1 large handful of fresh dandelion stems
  • 1 cup cooked lentils (green or brown work best)
  • ¼ cup reserved lentil cooking water or vegetable broth
  • 1 clove garlic, minced
  • 1 tablespoon olive oil

Instructions

Step 1: Soak the Dandelion Stems

To reduce bitterness, soak dandelion stems in cold water overnight. This helps leach out some of their natural bitter compounds, making them milder and more enjoyable.

Step 2: Prepare the Dandelion Spaghetti

Drain the dandelion stems and bring a pot of water to a boil. Add the stems and cook for just a few minutes until they soften and turn a vibrant green. Drain and set aside.

Step 3: Cook the Lentils (If Not Pre-Cooked)

If using dried lentils, rinse them well and cook in boiling water until tender. Reserve ¼ cup of the cooking liquid before draining.

Step 4: Sauté the Garlic

In a pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 5: Combine the Ingredients

Add the cooked dandelion stems to the pan, followed by the lentils and the reserved cooking water or vegetable broth. Toss everything together, allowing the flavors to meld. Season with salt, pepper, and a squeeze of lemon juice if desired.

Step 6: Serve and Enjoy

Plate the dandelion spaghetti, topping it with Parmesan or nutritional yeast for an extra umami boost. Enjoy as a light main dish or serve as a side alongside grilled vegetables or protein of your choice.
