“Eye sore” or a pretty healthy snack

Forage for:

Stinging Nettles (hence “sore”) & daisy (on the sunny day so you catch it nice and open)

Forage time:

February , March

Patience required: *

Ingredients

  • 1 Red pepper
  • Handful of stinging nettles
  • 1 daisy per eye

To do

  • 1) First wash your nettles
  • 2) Using scissors cut of the nice fresh leave into a put
  • 3) Add small amount of water and bring to boil. Boil very shortly. 2 min.
  • 4) Quickly cool under running cold water – this will preserve nice green colour
  • 5) Cut s slice from the pepper put it on a serving plate and fill the middle with the cooked nettles
  • 6) Decorate with daisy and enjoy.
  • If you prefer eating this hot, reheat in microwave before decorating with the daisy.
